Freeze-drying is a dehydration process used to preserve food for a long time, without loss of nutrients. The natural texture, color, and flavor of the food are retained. 

The freeze-drying process has three stages 

  1. Freezing 
  2. Sublimation drying or Primary drying 
  3. Desorption drying or Secondary drying 

During freezing, the water in the food is completely frozen and the ice thus formed undergoes sublimation (it is the direct transition of ice to vapor state without melting) due to reduced pressure, a mild increase in temperature. 

In secondary drying, the temperature is gradually increased to remove almost all the water present in the food. 

About 95% of the water in the food is removed, during freeze-drying making it a reliable process for food preservation.

 A recipe of beaten coffee 

3/4 -Tablespoon of instant coffee. 

2 – Tablespoon of brown sugar. 

1 & 1/2 – Tablespoon of water. 

Beat with a fork until your coffee mixture becomes fluffy and light brown, this may take around five minutes. Add a cup of hot milk, stir and enjoy.

An interesting piece of information

Astronaut ice cream is a freeze-dried product and their meals are also freeze-dried because these foods have a great shelf life, with a big no to microbial spoilage owing to the least amount of water content in them.
